  • Vinification: 2-3 hours of maceration, use of indigenous yeast only. After pressing, fermentation continues in stainless steel tanks. During fermentation at T<22°C, lees stirred regularly until the first decanting. 
  • Maturation: 10 months in steel tanks
  • Maturation in bottle: 3-4 months 
  • Alcohol: 12.5% vol 
  • Total acidity: 5.3 g/l
